Best Homemade Chicken Noodle Soup Recipe

1 whole chicken (3-4 lbs) 2 carrots, peeled and chopped 2 celery stalks, chopped 1 medium onion, chopped 2 cloves garlic, minced 8 cups chicken broth

3 sprigs fresh thyme 1 bay leaf 1 tsp salt 1/2 tsp black pepper 1 cup egg noodles

In a large stock pot, combine the whole chicken, carrots, celery, onion, garlic, chicken broth, thyme, bay leaf, salt and pepper.

Once boiling, reduce heat to low and simmer for 1-1.5 hours, until chicken is cooked through and vegetables are tender.

Remove the chicken and shred the meat, discarding skin and bones.

Return shredded chicken to pot and add egg noodles. Cook for 5-7 minutes until noodles are tender.

Serve warm chicken noodle soup in bowls. Can garnish with extra parsley.
